Baking | mince pies

Long time no post! I’m finally back after a hectic few weeks of sixth form, deadlines and colds. I’ve spent the day getting into a Christmassy mood baking mince pies and watching The Grinch (ahhhh so good!).

I knew I wanted to get a few posts up this week before the year’s out so thought I’d start by documenting my mince pie making (sidenote: I actually don’t like mincemeat…). They’re so simple and easy to do, especially since I cheated and just bought ready-made shortcrust pastry!

If you’re wanting a mince pie recipe from scratch then I’d always recommend the BBC Good Food website (like this recipe here).

I’m super happy about how they turned out and love the stars on top instead of the more traditional pies. Dusting them with icing sugar makes the perfect treat for any last minute Christmas party, however personally, mine are going to Father Christmas himself (got to butter him up to get some good presents, right?).
